Protein Waffles (Grain-Free)

Simply put, waffles are awesome. I could (and do) eat them for breakfast, lunch, dinner, and dessert. Leftovers make great sandwich bread as well (especially when toasted)!

And with these waffles, you get a major boost of protein. As if I need another reason to eat them. Without further ado…

Protein Waffles (Grain-Free)

Protein Waffles (Grain-Free)

Ingredients:

1/3 cup vanilla or maple-syrup flavored whey protein powder (I use Dr. Mercola’s brand)

1/3 cup coconut flour

2 tbsp tapioca flour

2 tsp baking powder

1/2 tsp salt

1 pinch of stevia

1 cup water

1/4 tsp vanilla extract

2 eggs

Directions:

Spray your waffle maker with oil and place on medium-high heat. In a bowl, whisk together all of your ingredients. Spread in your waffle maker and let cook until desired softness/crispiness (about 2 minutes).

Peanut Butter Waffles (Grain-free)

Unlike normal people, I rarely ever have waffles for breakfast. Rather, my family always eats them for dinner (breakfast for dinner is the best kind of dinner). And now, I guess, also for dessert? My brother graduated from middle school last week and for a mini “celebration” he requested waffles. I absolutely love waffles and I love this recipe because it’s made with peanut butter as opposed to flour. At first I was afraid that my waffles would end up flat. To my surprise, however, they ended up nice and fluffy. To make them “dessert-like,” we topped them with whipped cream.

 Peanut Butter Waffles (Grain-free) 

 Ingredients:

1/2 cup organic peanut butter

3/4 cup organic plain yogurt

4 egg

2 tsp vanilla extract

1/2 tsp cinnamon

Optional: 1 Tbsp flaxseed

Directions:

Mix all the ingredients together and cook in a greased waffle maker until nice and fluffy. Enjoy!
