Deconstructed Sushi Rolls (Paleo)

I was so excited to try my own “sushi” recipe. Instead of using the traditional sushi wraps, I had planned to use cucumber peeled into thin slices with a vegetable peeler.

After I had all my ingredients assembled and ready to wrap, I started with the peeling. A quarter of the way through, however, I came to the realization that this was way too much work. Especially since I would be able to down a whole batch of rolls in a 1/100 of the time it would take me to make them.

And, to be honest, I probably would not go through the hassle to make these rolls again if they required so much work. Nor did I want to give anyone the false impression that I would be by posting the recipe.

Sooooo… to make life easier, I chopped up the cucumber and added it to the mash- thus making my “Deconstructed Sushi Rolls.”

But to keep a bit of the ‘fancy’ factor, I scooped these up into “sushi balls” with an ice cream scooper 🙂

Deconstructed Sushi Rolls (Paleo)

Ingredients:

1 (14.5 oz) can of salmon, drained of excess liquid 

1 Avocado, mashed

1 cup raw cauliflower rice

2 tbsp coconut aminos

2 tsp dried ground ginger

1 cucumber, cubed

Shredded carrot

Directions:

Combine all ingredients (except carrot) in a bowl until evenly mixed. Use an ice cream scooper to plop into balls. Top with shredded carrot for a garnish, if desired.

Salmon Patties (Paleo) And A Farewell

Let me first begin this post by saying Happy New Year, everyone!

I wanted to begin 2015 off right by posting something that includes one of my favorite foods: fish! Plus, I’m pretty proud of this recipe as the patties held up on my first attempt (thus preventing much frustration). Enjoy!

In other news, I wanted to give everyone a heads up that there will be no new posts on Health Without Sacrifice for the next few weeks. Why?

I’m leaving for India in 2 days!

Needless to say, I’m very excited right now!

While over there, I’ll be traveling through the Golden Triangle- Delhi, Agra, and Jaipur- and teaching in the rural villages in between. 

Oddly enough, it seemed like it was only a few weeks ago that I announced in this post that I was going. But then again, with all the preparation and book drives (we collected over 1,200 books!) for this trip, time has seemed to fly by! 

And am I completely packed for this trip yet? Of course not! However, I have loaded up on a large supply of my homemade treats 😉

So, this is a short farewell for now as I’m probably not going to have stable internet access while over there. No worries though! I’ll be posting a ridiculous amount of pictures when I get back!

Salmon Patties (Paleo)

Salmon Patties (Paleo)

(Makes 6)

Ingredients:

1 (15oz) can of salmon

2 eggs

1/2 green bell pepper, diced

1/2 tbsp dried dill

1/2 tbsp garlic powder

1/2 tbsp onion powder

salt and pepper

ghee (or coconut oil)

Directions:

Combine all ingredients (except ghee/coconut oil) and form into 6 patties. Melt a tbsp of ghee or coconut oil in a skillet. Cook patties over medium-high heat, 3 minutes per side.

I finally finished up the apples (all 30 of them!) in my house yesterday! Hmmm, I wonder if there’s a thing of apple withdrawal…

Apple and Salmon/Tuna Salad (Paleo)

Ingredients:

7oz (more or less is fine) of canned salmon or tuna (drained)

1/4 cup unsweetened almond milk

1/4 cup lemon juice 

salt and pepper, to taste

1 large apple, cubed

1/3 cup chopped onions

1/4 cup chopped carrots

1/4 cup chopped celery 

1/4 cup chopped walnuts

Directions: 

Combine fish, milk, lemon juice, and salt and pepper in a large bowl. Add in the rest of ingredients and toss until combined. Let chill in the fridge for at least 45 minutes. Eat up!

Oh dear. I’ve joined the apple craze. Apples, apples, apples! I went apple picking last week and kinda got carried away with the amount I picked…

So, expect a LOT of apple recipes for a bit 🙂

Salmon and Goat Cheese Apple Slices 

Ingredients: 

1 large apple 

4 oz plain organic goat cheese 

1/3 cup salmon, cooked and cut into small bits 

1 tsp rosemary 

1 tsp parsley 

1 tsp lemon juice 

salt and pepper 

1 tbsp sunflower seeds, shells removed

Directions: 

Preheat the oven to 325 degrees and grease a baking sheet. Cut apple into thin slices. Place slices on sheet and bake for 10 minutes. Afterwards, take out and let cool.

Combine goat cheese, salmon, rosemary, parsley, lemon juice, salt and pepper. Spoon and spread on the just-baked apple slices. Top with sunflower seeds and place back in the oven for 5 more minutes.
